I was first told of the Great American Seafood cook off competition a couple of weeks ago. After checking out the five finalists, I have to say that my personal favorite would be Texas Gulf Shrimp by Chef Mark Holley of Texas.
Besides the fact that shrimps are one of my favorite seafood, I love the colorful dish. However, if I were to prepare it myself, I would add even more color to it by incorporating more vegetables, like lining the plate with lettuce and add in some beans and peas. Of course, I would not know how THAT will taste like but cooking is all about experimenting, right?
I think that we should find more opportunity to use domestic seafood in our cooking. It's healthier than meat and it's not that expensive anymore like previously. Also, fresh seafood could be easily obtained now from our local supermarkets.
